It had me for a minute, but I soon realised that once you've made your choice and take away the numbers the end result is always part of the 9x table and they share the same symbol. Tada!

Just as Huji said. Look at the 9x tables (9, 18, 27...) They are all the same symbol. No matter what number you pick, you will end up with one of those 9x numbers.
