I'm having difficulty searching for acapella's mainly because I can't seems to find either vocals from a song that I want to do a remix of because there isnt an acapella version of it. To my knowledge it is near impossible to remove instruments from a final mastered song, and the acapella will still most likely not be as good of audio quality as the orignal song. Are there sites out there that either sell acapella's used for songs that are actually pretty good? Or is it pretty much like what I've been told from other sites ******* pirated copies of the acapella's (Which I don't wanna do)

beatport, juno, trackitdown etc all have some although not many.
the home made accapella are ok if you are just planning on thrwoing it over another track whislt mixing but for a remix i would try and avoid them!

as I understand, if you just make the remix for your own pleasure, and dont sell it, you cant have any problems

As a last resort you can always email the record label the track was signed to, they'll have the original studio acapella and though you might not stand a great chance of getting it, there's no harm trying I spose.
With regards to legal issues, many (even signed) hardcore bootleg mixes aren't done with permission from the original label/artist. For example Ripped 2 Fcuck and Ballistic Bootlegs, and countless other tracks really (more commonly the old happy hardcore remixes heh)
