Say I own a website that sells 10 Pencils for £1. I add a paypal tab on my site so that people can click on it, buy the pencils and have them delivered. How do I know what address to send the pencils to? Do I get an email off paypal for every sale I make telling me where to send it to?

You should get the buyers details when you get notified of the transaction.
