So Ravebreaks and Hardcore breaks are very easily defined, but what are stuff like Reese's remixes of Stargazer and When the Rain Comes? Are songs like those just called Breakbeat Hardcore? I know labels don't really matter, but I'm curious.

Me too, although I always thought hardcore breaks was the older 93 stuff like early Prodigy, SL2, Smart-Es etc. whereas breakbeat hardcore was the more ravey take on it from around 94-95 like vibes and wishdokta, demo etc. although I imagine people who grew up in that era would probably lump them together as they experienced it as a whole.
Rave Breaks seems like it's more of a modernisation of hardcore breaks rather than breakbeat hardcore which is being modernised by many of those with ties to the Hardcore Underground label/CD series. Love them all though, personally I would say that Stargazer is Breakbeat Hardcore. Some Breakbeat Hardcore draws influences from drum n bass and UK hardcore while others will draw influences from the old breakbeat hardcore, but as they say "it's all hardcore"

Hardcore Breaks is early 90's sounding breakbeat tracks made with modern technology.

No worries, if you haven't checked it out already Hardcore Underground 5 has loads of amazing Breakbeat Hardcore in it and CLSM and Kniteforce are a couple of labels pushing loads of quality breakbeat hardcore too
