I'm a huge fan of chillout, and always dying to discover more of it!
I usually fall into the electronic chillout category, but I don't mind any kind of chillout... most of the time. I love it when there's a distinct melody somewhere, rather than just ambient sounds and pads. Blips, synths and pianos get me hooked!! Also really like it when there are eastern influences, like a sitar or an eastern sounding flute (I dunno what it's called really), and chants/choirs (like monks or females just using their voices as an instrument, like "aaaaaaaaaaaaaahhhooohhhhh" ish :D).
I'm posting my top three chillout tunes here, they should tell you something of what captivates me in a tune.

Oh Saltwater is a classic, love that one. It actually reminded of this one:
The original itself is a masterpiece but this remix is too!
Listened to the first tune you posted, took a while to get me into but it grabbed me after like 3 minutes when some nice pads were added! Second one... some eastern influences, that hooked me at once. :D Listening to third one and so far sounding good. :)

Aaaaaaaah the roots of Trance! Yes, I like it, but usually I don't feel the need to relax very often, so I barely search for it. Good thread for me to grab up a few tracks.
