I would say either Toytown (Hixxy + Sharkey), Neckbreaker (Scott Brown) or Let It Go (Gammer).

No chance! I can't pick one single tune for Hardcore (all its sub-genres: Happy, Breakbeat, D&B, Hardcore Techno etc) for the last 16+ years!
Favourite Happy Hardcore track is probably Jimmy J & Cru-L-T 'Take Me Away (Slipmatt Remix).

How can you like the Slipmatt remix? It takes away the chipmunk vocals!

DJ Krome & Mr Time - The Slammer
Origin Unknown - Valley of the shadows
SL2 - On A Ragga Tip

Prodigy - Charly
UK Apachi & Shy FX - Original Nuttah
Dutch happy:
Charly lownoise & Mental Theo - together in wonderland
Wonderland - be on a star
Gabber Piet - Hakke & Zagge
Bass-D & King Matthew - Like A Dream
DJ Isaac - I Wanna be a gabber baby
4 Tune Fairytales - Take me 2 wonderland
2 Brothers on the 4th Floor - Fairytales
Alot of Dutch artist work by dj paul elstak mainly his megamix releases in the mid 90's
Happy/Bouncy:
Happy Rollers - Muzic [dj ham remix]
Force & Styles - Pacific Sun [remix]
Hixxy & Sharkey - Toytown
Sub Source - Hardcore Euphoria
..and more just can't think
Gabber:
Neophyte - braincracking
Out Of Key - Sega Junky
DJ Dano & Liza 'N' Elize Feat. Fear Factory - Manic Cure
