my current fav: pepper crusted sirloin steak

8 sweet long peppers (green, red and cayenne)
2 red sweet gypsy peppers
2 cups extra-virgin Tuscan olive oil
4 garlic cloves, sliced
2 heirloom tomatoes, concasse
1T red wine vinegar
salt and pepper to taste
black peppercorns to taste
5 oz sirloin

peppers:
char peppers on grill covered for good grill flavor (reserve two charred red peppers for puree). pan fry peppers in olive oil until tender. pour off 3/4 oil and reserve. add sliced garlic to oil and toast slightly to golden brown. add tomato concasse and saute. strain excess tomato water and reduce to three ounces; mount in olive oil. Finish with red wine vinegar. season with salt and pepper.

take charred peppers and peel most of charred skin, remove seeds retaining natural juices through entire process. blend pepper with olive oil until thick enough to make quenelle on plate.

steak:
crush black peppercorns on cutting board with underside of small sauté pan. season steak with salt all around. Season with peppercorns on presentation side only. grill steak to medium-rare. cross hatch both sides 8 to 10 minutes; let rest.

slice sum red onion. grate sum cheese. toast 1 side of the bread, flip it over.. add the ham, onion and finally the cheese.. grill till melted.. enjoy!

I make a killer Spaghetti Bolognese :)

Mince meat
Mild tomato salsa (not bean)
Tomato sauce / Ketchup
Garlic powder
Half an onion
Salt + Pepper
Chili powder

Add water to pot around 0.25 full or so that the meat is covered with around 2-3 cm of water, you don't want the meat to touch the bottom of the pan or it will burn.

Dice the onions as tiny as you can make them, this is important as you need them to basically melt

Boil the water
Keep the heat on
Add meat + stir
Salt, pepper, garlic powder + stir
Add onions + stir
Cover pot and stir every 10-15mins

You're basically trying to cook the meat and boil away the water, it will take 30-60 mins.

Once the water has gone down a little add some tomato sauce, a little chili (depending on how hot you want it) and stir.

10-20 mins later the meat will start to look like wet mud, be careful at this stage it's easy to burn. Add the salsa. Heat for another 5 mins stir every 30 seconds (otherwise you'll burn the sauce).

Don't try to boil away all the water, a meat sauce is a little muddy not dry meat.

Boil spaghetti in salted water (important for flavor and so it doesn't stick together). Add meat top of spaghetti and enjoy!

alright first your gona need a skillet
next your gona need at least two pounds of beef or pork
and now your gona need to add some stuff to keep the right consistency

uhh 2 eggs
a cup of milk or cream
and a half cup of flour

you can add almost anything as a extra flavor
half teaspoon of salt (same as pepper)
ive done it two ways
an onion
a fourth teaspoon of dry mustard
and a fourth teaspoon of (i use tastefully simple spice idk if they got that in the uk) so any spice

you can substitute the onion and random spice for an eigth teaspoon of nutmeg

or you can add anything you think will be good

you can mix with an electrical mixer but i perfer hand
i make my meatballs rather large and usally produce 20 or 30


oven top
next your gona pull out that skillet and put just a bit of olive oil/cooking oil on the skillet and heat it up for a couple minutes.
next youll take your meatballs and put 10 or 20 on at a time depending how big your skillet is
use a spatuala or tongs to flip the meatballs over so they get cooked all around
cook them for AT LEAST 15 minutes
you can eat half a one to check the middle to see if its done or not or splice it open
throw those ones in something that wont melt and go on to the next batch

How do you guys remember the recipes off the top of your heads! I can't remember the quantities without checking.

I've got a proper nice duck in orange sauce recipe at home. Will post it up here some time if I remember.

i keep a little notebook of my favorite recipies and my mothers friends recipies they write down

ill be expecting that cause ive always wanted to learn how to cook duck
and lamb

i made this one for my mothers work and got a feedback about how these were "so good it was almost sinful"

ok so i was thinking id make some oatmeal cookies
but instead i wanted to make a cookie sandwich type deal
so
you make some oatmeal cookies im not gona tell you how you can find it anywhere
but instead of making them large
make them into small balls
make sure you take a fork and flaten the top so when you put them in the oven they are about 3 inches in width

when thats done let them cool for a couple hours
you want to make sure that they are not warm at all

while they are baking your going to make the middle mix
one package of an 8 ounce cream cheese (make sure its softened. i had the pleasure of mixing it when still cold)
2 tablespoons of sugar
2 tablespoons of apple juice (or grape juice never tried it)
2 tablespoons of strawberry jelly (or rubarb jelly)
a fourth teaspoon of ground cinnamon

mix all these together so its nice and smooth you dont want any chunks or anything
nice and smooth
youll know when its done

take your cookies and set them with the flat side up (bottom)
take a sppon and scoop your mix onto one side of the cookie (not so much when you put the other one on top it squeezes out on the side)
make sandwiches with all cookies

i put these in the freezer for about an hour
i took em out but they still fell apart
so i dipped them in chocalate

2 teasppons of vegetable oil (to make more smooth better tasting)
6 ounces of chocalate chips

melt the chocalate chips in the microwave with the oil (preferbly a glass container)
take it out every 15 seconds and mix it around (chocolate burns easy)
do so until you get it nice and smooth

dip cookies into chocolate (half way)
put them back into the freezer for about an hour
then you can put them in the fridge after that

these are really good

Cranberry Jalapeno Cookies Recipe


2 c Flour
1 pk (8-oz) cream cheese;
-softened
2 Sticks butter; softened
1/2 c Water
1/2 c White vinegar
3 -(up to)
4 Jalapeno peppers; chopped
1-1/2 c Sugar
1 pk (12-oz) fresh cranberries
Confectioners sugar

Place flour in bowl of food processor. With processor running, drop in chunks of the cream cheese and butter. Process until dough is formed. (Alternatively, mix the cream cheese and butter in a large mixing bowl by hand or with electric beater.

Slowly blend in flour until dough is formed.) Wrap dough in wax paper or plastic wrap. Chill for at least one hour. While the dough is freezing, make the cranberry mixture: Place the water and vinegar in a 3-quart saucepan. Bring to a boil and let boil 5 minutes.

Add the jalapeno peppers and the sugar. Return to a boil and let boil 5 minutes. Mix in the cranberries. Return to a boil and let boil 5 minutes. Remove from the heat and pour onto jelly roll pan. Chill for at least one hour. When ready to assemble the cookies: Dust work surface with confectioners’ sugar.

Working with a small chunk of dough, roll dough to about 1/4 thick. Cut dough into 2 squares. You can re-use the dough scraps. Place dough squares on cookie sheet sprayed with vegetable oil spray (do not *grease* the pan or you’ll have a real mess!). Put about 1 t cranberry-jalapeno relish in the center of each dough square.

Bring 2 corners of the dough-square up and seal well. (Cookie should be shaped something like this: : / / <— Cranberry exposed here / <— Dough / / <— Cranberry exposed here : / Bake 12 minutes at 350 degrees. If cookies unfold during baking, press them back into shape while warm. Cool on rack. Dust lightly with confectioners’ sugar.

Excelent munch!!!!
