Oh and to comments earlier.
My girlfriend plays video games. We play together all the time. But we do loaaaaaaads of other things too. Quality time is great, period.
The only thing I'm currently playing on PC (Because I have PS3, can't help you if you have 360) is Fallout 3 (Modding ftw), Age of Empires 3, and the original Halo.
AOE 3 is pretty fun, I need to get the expansions. Like, badly.

I actually started playing warcraft 2 again =P
some games I've been loving on this summer: street fighter IV, fallout 3 (finishing up all the dlc), valkyria chronicles, fight night round 4, punch-out!, wipeout hd & marvel vs. capcom 2
gtaIV is fun but I haven't played it for probably a year...will probably start playing again when the dlc goes on sale

Even though it doesn't fit your parameters (it's multiplayer), THE BEST timesink game on the planet is World of Warcraft. No question.

marvel vs. capcom 2
how is that game?
i dont want to "buy" it and it suck, even tho it would only be like $1.50, cuz $40+ for an xbox 360 game sucks
the basics are easy to learn and the execution barrier for impressive combos is low; if you can mash buttons you can combo. it's fun to watch & play since it has over the top seizure inducing combos.
the online play feels a little lacking compared to street fighter IV & the hd remix. as with most fighting games, it is much more fun to play against human opponents sitting right next to you.
it's only $15/1200 ms points on psn/xbl.
shadow complex looks pretty impressive as well. people are basically saying if you like metroid you'll like this as it was inspired by metroid...it's also 1200 ms points
lol, naturatech I don't want to see your chicken

How about the best space shooter ever - FreeSpace 2?
This 1999 game, updated by the community (Source Code Project, aka SCP) to a rather impressive 2009 gfx standard, features some insanely intense action and an amazing epic storyline. How about basically feeling like you can kick the whole universe's ass and then suddenly realizing that the disaster you're fighting is totally unstoppable - and all you can do is minimize the damage here and there? That's FS2. The music is excellent too, one of the calmer tunes even sounds like an inspiration for Gammer's "Ambient Angels". ;)
There's a big 3.47 GB up-to-date FS2 SCP 3.6.10 edition which you simply unpack and run, you shouldn't have much trouble googling it. Among several add-on campaigns (which effectively turn the whole thing into weeks of fun) there is a port of FS1 (called Freespace Port), which you can play first if you'd like the whole story in the correct order straight away. The 3.47 GB package comes with a nice description which you should follow (especially regarding the launcher settings - you need to select specific media packs for some of the mods/campaigns).
I'm not much of a gamer any more, but this is probably the best game I've ever played, so I just had to recommend it. Happy Shivan blasting, and here's the intro:
