Nice to see another southerner on these forums! A bit surprised you have a scene! Around the area where live (Bella Vista, AR) , electronica in general is devil's music. 
I don't have a specific favorite track of all time, although these are at the absolute top of my roster, and will likely remain there for quite a while:
Cris.E.Manic - Composition B <- You'll have to listen for yourself. It's spectacular.
Fade - The Other Side <- A dark, haunting track that really pounds.
Kevin Energy & Blackout - Crazy Styles <- Awesome melody, awesome beats, great execution all around.
Eclipse - Be Happy <- Puts the happy in happy hardcore. Both the original and Brisk & Vagabond remix are sweet.
Sharkey - Product Of Society (Hardcore Society Mix) <- A lot more emotional than most other hardcore out there. I love it.
Helix - Now Control <- Quite a tune. Very, very cool, from the intro to the end.
Scott Majestik - Acid Dreams <- A real slammer. Nice and stabby synths, not to mention the main melody is great.
Brisk & Ham - Gettin' Down <- This track just rolls. Really epic.
Metropolis - Liquid Nights <- A pretty advanced hardcore tune for it's time in my opinion.

Do you go to the Sound System Syndicate/Rave With Us events? This is Bonkers. I've been to a few of their events, going as far back when they were having to use a storage room in Southern Ice for a venue (Before Rocketown).

My overall favourite hardcore track of all time is Baby D Let Me Be Your Fantasy. But I have favourites from different styles.
Breakbeat Happy Hardcore; Luna-C Piano Progression/obsession
Happy Hardcore; Tough one this, so many faves, Terminator special remix, Forever Autumn, Wanting to Get High, Perfect Dreams se remix, Higher Love and on and on .....
New Style hardcore; Slippery Disco Feeling High
Jungle; Urban Shakedown feat Mickey Finn Some justice 95 ( Arsonist)

Hold me Passionately and Song of Angels are great tracks, although I do actually prefer the b-side to song of angels ie get a life :-)
